Mixing, Cake and Rain

I’ve been making a special cake today for the 40th birthday of a good friend’s daughter. This one had to be dairy free which gave me a few challenges but I think it has turned out well.

Here it is!

I went out this evening, after a lovely blue sky and sunshine day, to see the turning on of Redruth’s Christmas lights and the lantern parade.  The heavens opened and I got drenched to the skin in moments despite wearing a padded coat and I’m afraid I missed all the fun. What a disappointment for all the school children with their paper lanterns. I did take a couple of photos looking up the street and was interested in the effects that came, all with the camera on the same setting.

Croissants and Carrot Cake

For our last breakfast before the family set off for home yesterday, LiveWire No 3 made croissants and very good they were too.

Using carrots from our wonderful Roots veg bag, we made Spicy Carrot Cake Tray Bake today – a Mary Berry recipe which works every time.

Vaccine, Blossom and Buns

Coming home from having my second dose of the vaccine today, the Clematis on the front fence was catching the sunlight and looking lovely.  The Stihians Showground vaccination operation is brilliant and staffed by friendly and efficient volunteers.

I made Blueberry Muffins this afternoon – very quick, can be eaten warm and were delicious in the sunshine with a cup of tea.

1    The clematis in the front garden has lovely fluffy seed heads – and this one has a Green Shield Bug on it.

2   Truro’s hanging baskets are quite splendiferous this year – every turn brings another beauty.

3   We are having a picnic with friends tomorrow and I have baked a Mary Berry recipe, a Scone Tray Bake for the shared lunch. I’ve also collected lots of beautiful salad leaves from the garden.
