Jackfruit Lasagne – Vegan or Vegetarian
This recipe, given to me by a friend, can be vegan or vegetarian, depending on which version of a cheese sauce you choose to make.
For this one, for veggie friends, I made a conventional cheese sauce, a butter and flour roux with milk added to make the right consistency, adding whichever grated cheese you choose.
To make a Vegan Cheese Sauce, as I did for our daughter, follow the next recipe.
Ingredients
200g butternut squash
150g cashew nuts, soaked in water for 4 hours then drained
2 tablespoons nutritional yeast
1/2 teasp cayenne pepper (optional)
juice of one lemon
How to do it
- Roughly chop and steam squash for 15 mins.
- Blend all ingredients together in high speed blender until smooth.
- Use as detailed in recipe above. I used the whole amount to serve 6.
