One of our favourite veggie meals is Rainbow Roast, lots of roasted vegetables with cubes of halloumi cheese. There are red, yellow and green peppers, courgettes, red onion, cauliflower florets, sun-dried tomatoes and red grapes – it is delicious!
I just about managed to get a photo of the little wren who visits our garden.

I saw those Pandas yesterday on the news . . . WHEE!!!!!
I also like to roast veggies for dinner ~ we often do a colorful mix of broccoli, cauliflower, potatoes, and carrots. YUM!

It is! I toss all the cut up veg in garlic olive oil before tipping onto the tray, rather than pouring oil all over them. I makes it less greasy and adds to the flavour. 🙂

I love roasted veg, never thought to add Halloumi to it.

I add the cubes of Halloumi about 10 mins before the end so they soften and get a bot of colour. Hope, if you try it, it works for you. 🙂

I am daily feeling better Sally, thank you for sending so much wonderful healing energy. I can feel it. I am just tired now and only cough in the mornings. Feel otherwise my old self. I am taking it easy and go slow. Big hugs ♥
