Roasted Rainbow and Another Good Read

One of our favourite meals tonight, a rainbow of roasted vegetables with halloumi cheese – scrumptious!

Red Pepper, Sweet potato, Carrots, Yellow pepper, Broccoli, Red onion

My lovely book buddy, H,  brought me up another good read yesterday and I have just spent two days reading! I thought I would just read a page or two and then get back to the various things waiting for me but I haven’t been able to put it down!

If you haven’t read this, then I suggest you do. The story is quite remarkable, very moving and  is just chock-full of human kindness.

    We love roasting veggies for dinner, often adding cauliflower, potatoes, or sweet potatoes. Like Ark, roasted beets are great too . . . but I often roast them by themselves so they don’t “stain” the tatties. 😀

      Thank you, Nancy. Inspired by both you and Ark, I’ll seek out some beetroots and roast them. We’ll let you know how it goes. 🙂

    As a vegetarian I love roasted veggies. Even more scrumptious if they come from your own garden.
    Have you tried roasted beetroot in the mix?

      Sadly none of those from the garden – we’ve even run out of onions this year! We haven’t tried beetroot (only in chocolate cake!) but will as soon as there is some to harvest. Thanks for the tip. 🙂

        I reckon you will love it.
        Only having ever eaten it pickled as a kid and not that enamoured when I first heard about it beingvriasted, I wasn’t keen at first. Then I watched a gardening video by Charles Dowding.
        Now I grow it all the time and it is usually a staple veg in roasts.
        The are easy to grow.
        The chioggia beets are great and have a delightful pattern on the inside.

          Both of us only experienced beets in vinegar and it put is off for life! However, with your suggestion and Nancy endorsing your thoughts, we’ll certainly give it a try. Thank you! :). Charles Dowding is the inspiration for the no-dig project we are involved with on Tuesdays, volunteering at the ‘farm.’ I’ll see if they have any beetroots available on Tuesday. 🙂
