One of the joys of making a half of Granny’s fudge recipe is that it leaves half a can of condensed milk so, at the weekend I was also able to make two mini Lime and Ginger Cheesecakes, one to freeze and one to share tonight. Click the red link for the recipe for the fudge.

I looked at your recipe, Sally, and empathised with your love of stem ginger. Like you and your Mum, Dad and I were great fans of stem ginger, which often appeared in lovely Chinese pots at Christmas. Stem ginger is a rarity in rural Western Australia, but after many years without any, I found a lone pot (made in Kent) in our local supermarket a week or so ago. I too have eaten the odd ball from the jar, but have also been putting slices in Greek yoghurt with blueberries and granola. I finished the last ball tonight and stirred the last of the syrup into the yoghurt. Yum!

Yum indeed! Love the idea of the yoghurt mix. 🙂

I love fudge and I love cheesecake, but mostly I love seeing that recipe and all the memories attached to it. 🙂

I was so pleased that my cousin shared memories too. We haven’t seen each other for maybe 60 years but have experiences to share which is so very touching. 🙂
