I’m refilling the freezer after Christmas and started with a Pork, Apricot, Ginger and Lemon Thyme Casserole – delicious! We had some for supper tonight and there are six boxes cooling for freezing later.
A friend brought me some daffodils last week and now they are all open and beautiful.
Laughing is such good medicine.
