2 I’ve booked myself onto a Photography Course at Lanhydrock at the end of February and am very excited about learning how to take better photographs.
3 Sue, Mr S’s cousin made a wonderful Chocolate Torte for the wake last week. She has sent me the recipe today and I’ll be trying it soon. It has avocados, cocoa and coconut oil with a pecan and date base – no butter, no cream, no biscuits and it’s just amazing! I don’t know how many calories it’ll have!!

This sounds wonderful and I will make it at the weekend. I’ve slipped back on my diet, lost nearly 3 stone in 26 weeks but got sidetracked over Christmas. Will use Splenda substitute, and dark chocolate as suggested. Need to substitute the dates so need to think about that. Thanks Anne

Congratulations on your weight loss – brilliant.
Are you wanting to substitute the dates because of their sugar content? I think they will be needed to glue the pecans together and you do only eat the smallest slice as it has such a chocolate hit! let me know how it works out. 🙂

I haven’t yet made this myself and may sweeten it a little more when I do. It did need some cream and we ate it with Blueberries.I think I may use Green and Black’s cocoa rather than the raw cacao powder. Do let me know how you get on and I’ll tell you, in my blog, when I’ve tried it.

CHOCOLATE PUD/FLAN – A LA GIBSON
300g Pecan Nuts
200g Medjool Dates
Filling:-
4 medium ripe Avocados
150g coconut Oil (can get in health store)
The Seeds of 2 Vanilla Pods
200g raw Cacao Powder
Pinch Salt
100-150g vanilla or castor sugar
Soak pecans for approx. 6 hrs. Blend with salt and dates until a dough forms.
Press this mixture into a greased mould or loose bottom cake tin.
Blend all the filling ingredients. Pour onto base and freeze for 1 hour.
Before ready to serve, decorate with raspberries or whatever fruit you like.
Enjoy!
