Hoolies and Cooking Up a Storm

The weather has been wild, the trees bending to the ground, the lashing rain almost horizontal but we’ve spent the day in the kitchen cooking up a storm, ready for next week when we will be 15 for meals on one day, 12 on three other days and 7 for the rest of the week. In the freezer now are a vegetarian Chilli, a Beef and Chestnut Casserole,  two Sweet Potato and Chestnut Nut Roasts, a Chocolate Torte and a Lime and Ginger Cheesecake. All the makings for a Chicken and Sweetcorn Lasagne are there too and people start arriving on Friday. Happy days – family all together for the first time in four and a half years!

Mixture of chestnuts, cashew and sun-dried tomatoes just before the fried onions and garlic are added to be followed by mashed sweet potato. It’s a scrumptious nut roast!

    You are too efficient! I open the freezer and just hope there is something there. My best dish is stew with something different thrown in every time. Get no complaints. 🙂

      There’s no way I could have so many here for so long without getting lots of it in the freezer beforehand! I shall certainly need a rest when they leave in 10 days! 🙂
