Last night was the full Harvest Moon.
I made a big moussaka today and will freeze it in portions for almost instant dinners on the nights I don’ t feel like cooking.
Another gloriously pink-becoming-orange-becoming-fiery sunset and all within moments.

It’s great to have something tucked away in the freezer for nights when cooking holds no appeal.

I’ve loved cooking for so many years and now find that there are more nights when I really want something quick and easy. A good batch bake of ragu and pie fillings and other favourites always pays off on nights like those.
We are clearly on the same page! 🙂
