Lemon Curd – Mum’s Recipe

Lemon Curd

This is the recipe that my Mum always used, called Lemon Cheese and from a recipe from A. Woodcock from 1940ish.  I have the recipe in Annie’s handwriting. You can see that she also made it in much larger quantities. Many of the recipes in this little book are in enormous quantities as Miss Woodcock baked for a bakery. It couldn’t be more simple but it’s a good job I watched Mum make it many times as Miss Woodcock gave only the ingredients. The method is Mum’s.

Ingredients

  • 4oz butter – cut into smallish chunks
  • 1lb sugar, caster or granulated
  • 4 eggs, beaten
  • 4 lemons, finely grated rind and juice
I often make it with 3 ozs butter, 12ozs sugar, 3 eggs, 3 lemons which makes 3 little jars and that’s what I did here.

Method

  • Put all ingredients into the top of a double saucepan or in a bowl standing over  a pan of just simmering water.
  • Stir until all the sugar has dissolved.
  • Continue heating, stirring from time to time, until the curd thickens.  It takes some time but don’t try to hurry. If you turn up the heat, you are in danger of making scrambled curd. Use a wooden spoon. I melted the spatula!

Coating the spatula so now ready to pot

  • Convention has it that you strain the curd into sterilised jars but we like the bits so we never strain it. I sterilize the jars by half filling them with water and heat them in the microwave and then  dry them out in a hot oven. Let them cool a bit before you pour in the Lemon Curd.
  • Store in a cool place (I usually keep them in the fridge) and use within 3-4 weeks. Ours rarely last that long! Mr S loves Lemon Curd on hot toast and I have been known to use it in recipes. See Lemon Curd and Clementine Parfait

    This is an absolutely brilliant recipe and so clearly
    added in a step by step fail-safe manner that even
    I can follow 🙂 The mention of your Spatula melting
    gave me a chuckle so it will definitely be the wooden
    spoon alternative 🙂 I think leaving all the bits in the
    mixture sounds better and thank you for your method
    of sterilising the jars too, though I guess some wine
    making sterilising tablets might work for that one? 🙂

    I used to use those when I did the home made wine
    some years back and it never failed. Excellent idea
    of your own though and I may use that method over
    the tablets as it is a sure way of knowing for sure that
    the containers are sterilised properly 🙂

      Thank you for this! I did pick out the bits of melted plastic! I think the wine tablets sound like a good idea.

        You are very welcome, I try to keep up-to-date on commenting and of course replying to everyone on my own Space too, I feel that this is important when someone has taken the trouble of visiting my Space and looking through whatever I have added 🙂 I used to just write horror on my Space but lately I have been speculating, and adding different themes, though some are a tad adult in nature but my Space does carry a warning, so I guess that is acceptable. I have had a number of people e mailing me telling me how my Space is not welcomed here but hey everyone has their opinions, but if they do not wish to see my Space then all they have to do is decline 🙂 Have a very nice Thursday and keep on blogging your three beautiful things as you have a nice approach to blogging, which I like 🙂 Not everyone likes me on their Space so I am pleased that you are fine with my visits, and of course my commenting here 🙂

            Yes it is just being able to fit it all in when there are so many interesting Spaces to view, but I am glad that I started adding comments to the peeps that call by as it is nice to show an interest instead of just adding and expecting others to view without even a thank you. I also like to add comments where I can as it allows a little bit of interaction and a more personal approach, though many just click on the ‘Like’ option and I feel that is just too easy, and an opportunity lost because WordPress is not just about adding our own thoughts and interests, it is also about forging friendships and I have friends on my Space that have been with me since my days in Windows Live Spaces, which is spanning six years of blogging, and a friendly joviality amongst friends that has built up over time, such as my great friends Sue Dreamwalker, Icewolf of Europa, Red’s Mommas Money Matters at M3 and lots of others who have very nice Spaces here in WordPress and beyond 🙂 Okay I am waffling now so I will add this one 🙂 lol
