Rhubarb Butterscotch Pie

Rhubarb recipe from Ambrose Heath

3 cups chopped uncooked rhubarb – as you see, we forgo the pastry.

One teacup soft brown sugar

Sugar + 2 dessert spoons flour

Mix flour and sugar together before adding …….

…….. two beaten eggs

Mix lightly together with a fork

Pour the mixture over the rhubarb and bake folllowing instructions above

Enjoy! With cream or ice cream if you like. I like it just as it is!

It’s best in a fairly shallow dish. The batter sweetens the rhubarb as it cooks and leaves a scrumptious sticky layer all round the bottom of the dish. Sometimes the top is crunchy, sometimes more spongey – always different, always delicious!

    Oh my goodness, I’m making that recipe tomorrow! 🤪 Gorgeous ice patterns too, but the rhubarb recipe has made my mind go haywire 🤣

    Now rhubarb is one of my most favourite desserts,
    of course I do like the crunmble version but this idea
    is a scrumptiously good looking pudding for sure 🙂

    I like the way in which you have presented this one
