Creamy White Chocolate Chai and Vanilla Pots

This amazing pudding treat came from The Nutrition Guru and the Chef Thank you!!

The recipe that follows is theirs with my comments at the end.

Creamy White Chocolate Chai and Vanilla Pots

This recipe is so versatile as it can be served warm or cold. Serve warm with a runny custard-like texture (perfect on a cold winters night) or, chill in the fridge to thicken and set.

This isn’t one of our low fat low sugar recipes but that’s ok because we all need a treat every now and then. We believe in: EVERYTHING IN MODERATION and that no food is labelled as ‘good’ or ‘bad’, rather it is how often you eat high fat foods for example. This is the perfect little treat for a dinner party or for a loved one on a special occasion!

There are a few options here of how to flavour the milk with the chai.

We have used chai powder here which you can find in some specialty stores.  Or you can purchase loose leaf chai tea, and grind your own in an electronic coffee grinder or simply place loose leaf chai into a pepper grinder and grind. Another way you can do it, is to place chai tea bags into the mixture whilst it is on the stove and let the tea infuse.

Recipe

  • 500ml Cream
  • 500ml Milk
  • 3 tbsp plain flour
  • 3 tbsp honey
  • 3 tbsp chai powder (this comes down to personal taste. Add more or less if you wish).
  • 250 grams chopped white chocolate
  • 1 vanilla bean, or 2 tsp of vanilla essence

Method: Whisk Whisk Whisk!

  1. Place flour into saucepan on medium heat.
  2. Pour 1/2 cup milk onto the flour and whisk to combine. The flour should absorb some of the milk and  eventually turn into a paste. You will need to keep stirring as the mixture will be lumpy. The goal is to keep stirring to remove all lumps.
  3. Once lumps have dissolved add the rest of the milk and add the cream into the pan over the top of the flour  and whisk together.
  4. Keep whisking and bring to the boil. (You may need to increase the heat of the stove).
  5. Whisk in the chopped chocolate and chai powder.
  6. Slit the vanilla bean and with the knife scrape the seeds from the bean and add to mixture. Add pod to mixture also. If using vanilla extract or essence as a substitute, add this now.
  7. Leave on a gentle boil for 5 mins, constantly stirring to prevent the mixture from burning and ensuring a smooth consistency. This step is to thicken the mixture.
  8. Turn heat down to low.
  9. Continue to whisk mixture for 5 mins or until it starts to thicken and go silky smooth. There should be no lumps!
  10. Remove vanilla bean.
  11. Serve hot for a devilish treat on a cold night.
  12. Or, place in fridge and mixture will thicken and set.
  13. Enjoy!”
My comments:
  • I couldn’t find Chai powder so used tea bags as suggested above. I used 6 tea bags and steeped them in the milk for 30 mins at 10% in the microwave. I would use 8 next time but will try hard to find Chai powder.
  • I left out the honey! This was a mistake that I’ve only just realised as I’m posting this but as the dessert is very sweet, I don’t think it mattered.
  • I make white sauce without a roux to keep it low fat so am used to this blending method. I would recommend having NO heat until the first blending is done at no.3 above when I added the warmed milk that had had the tea bags steeped in it.
  • Whisking is the secret! I used vanilla paste as it’s hard to whisk with a pod in the mixture.
  • These servings in the small wine glasses were rather large for us. I would use shot glasses next time.
  • The raspberries added some piquancy to contrast with the sweetness. The lavender flower looked gorgeous but I don’t know if they are edible……..
  • We liked the pud chilled better than warm but both were delicious.
  • Thank you again to the Nutrition Guru and the Chef!

It is delicious though very sweet and best in small servings with some raspberries on the side . Enjoy! 🙂

One quick feedback, the word ‘chai masala powder’ and the product found in ethnic Indian stores just means the spice blend that goes into the chai when you prefer it, tea leaves are added separately…it doesn’t include any tea leaves at all. The chai teabags which you rightly used for this recipe, on the other hand, come with tea leaves and chai spices in it…thought it might be worth knowing.

This dessert looks so delicious and super simple, cant wait to try it out:)

Thank you very much for this helpful information. I shall try to find some chai masala powder. I have tried our Health food shop but will now ask my daughter in London to find some for me. 🙂
