Rainbow, Truro and Cheese Biscuits

20 Dec

Just caught a rainbow this morning.

We were early into Truro this morning so the lights were not lit but they were welcoming.

The Redruth Carol Choir is coming along our road on Sunday so I have baked some appropriate cheesy biscuits to offer with next door’s mulled wine as some refreshment and reward for their efforts..

Those cheesy biscuits look fabulous. I wonder if you can give me the recipe please?

It’s the easiest in the world and a big cheat! I buy ready made pastry and roll it quite thin. I then cover one half with grated Parmesan , fold it in half and roll it out again. Then I cover half with cheddar and garlic pepper and fold and roll again. Then I cut out and put them on the tray to bake at 180C having painted them all with beaten egg and added more cheese of whichever kind takes your many! They are best just warm and very moreish! 🙂
